Ayam Betutu: Slow-Cooked Balinese Spiced Chicken

Ayam Betutu is one of Bali’s best-known slow-cooked chicken dishes: a whole chicken is seasoned generously with Balinese spices and cooked long enough for the aromatics to penetrate the meat.

FOOD & CULTURE

Its place in Balinese food culture

Indonesia Travel describes Betutu as a Balinese dish with regional variations and notes its long relationship with communal and ceremonial food as well as its later life in markets, warungs and restaurants. The exact spice balance and finishing method can differ between families and regions.

What it tastes like

Expect a deep savoury aroma from fresh Balinese spices, with turmeric, ginger, galangal, lemongrass, shallot and garlic often contributing colour and fragrance. Heat can be adjusted, but Betutu should still taste layered and aromatic rather than flat.

Traditional technique and what you learn

Traditional approaches can include wrapping seasoned chicken in banana leaf or other natural wrapping and cooking it slowly. Modern kitchens may steam, braise, roast or combine methods. The important principle is long, gentle cooking so the meat becomes tender and the spice penetrates.

How it works in your private class

A full Betutu can take several hours. In your private class, you prepare the spice base, season the chicken, learn the wrapping and slow-cook method, while a pre-started Betutu can be finished for the meal. That keeps the experience genuinely hands-on without pretending a long-cooked dish can be completed from zero in a short session.

Dietary and ingredient notes

Chicken dish. Spice pastes may contain shrimp paste depending on the recipe, so pescatarian, shellfish-allergy and other dietary requests must be discussed before confirmation.
